Macaroons

Here is a recipe I tried for the first time recently.

You can get the recipe and see a video how to make them (better than I can) here.

This post is also part of ‘Monday Mania’ on Sarah Pope, The Healthy Home Economist’s, website, thehealthyhomeeconomist.com, and the ‘Monday Mania’ post can be found here. So, here we go!

First, beat 4 egg whites until sharp peaks form.

Then beat in 1/2 cup maple syrup, 2 TBL Arrowroot powder, and 1 TBL vanilla extract.

You may now fold in coconut meat if desired.

Place large spoonfuls on to a parchment paper lined baking sheet. You should get about  two dozen macaroons.

Bake at 300°F for thirty minutes. Then reduce the temperature to 200°F and cook for another 1-2 hours.

Enjoy this healthy snack!

P.S. I’ll get pictures up soon!
