Here is a recipe I tried for the first time recently.

First, beat 4 egg whites until sharp peaks form.
Then beat in 1/2 cup maple syrup, 2 TBL Arrowroot powder, and 1 TBL vanilla extract.
You may now fold in coconut meat if desired.
Place large spoonfuls on to a parchment paper lined baking sheet. You should get about two dozen macaroons.
Bake at 300°F for thirty minutes. Then reduce the temperature to 200°F and cook for another 1-2 hours.
